Just about every morning, I routinely make my favorite gluten free, dairy free breakfast sandwich! I have been continuously buying the Just Egg folds to use for breakfast sandwiches. They are my absolute favorite and taste no different, in my opinion.


- dairy-free butter (my favorite is Earth Balance soy free)

- 1 just egg fold

- 1 slice of dairy-free cheese (I use simple truth non-dairy cheddar slices)

- 1 slice of ham or 2 slices of bacon (make sure to read the label to make sure your meats are gluten free)

- 2 slices of gluten free bread (Schar brand is my favorite!)


  1. Grab a large skillet, big enough for both cooking your bread and your egg. Add butter to the skillet, and let it melt over the whole surface. Also butter both slices of the gluten free bread.Lay slices of bread, butter side down on the skillet as well as the egg fold. Set your timer for 5 minutes and toast bread on skillet, remove when toasted.

  2. When timer hits 2:30 seconds, flip egg fold and add meat and cheese to the other side of the fold, cover until timer is up.

  3. When done, add egg, ham and cheese to toast and serve!


For my breakfast sandwich, I use brands that I've grown to like over time. I will say, when it comes to bread and cheeses, it is completely up to you and your taste buds on what works best. The Simple-Truth Non-Dairy Chedder Slices are my favorite. I buy them at Kroger and have yet to find them at another place. They melt much better than some dairy-free cheeses and I believe the taste is pretty similar to cheese itself!

There are several dairy-free butters that I have grown to love. The one I use the most and find tastes incredibly close to real butter is Earth Balance. Several people I know that choose to eat healthy have told me, they believe the same about the brand. I prefer the Soy-free Earth Balance Buttery Spread. They have several spreads to choose from, just pick your poison! The bread I use is, Schar Artisan Baker White Bread. The slices are a bit small but the bread itself tastes delicious. I have always been a white bread gal but they have several other types of bread and goods that are good as well. I have tried this same breakfast sandwich with Schar's Gluten-free Plain Bagels, which was also great. If using a bagel instead, it is best to just toast the bagel in a toaster then add the egg fold, meat and cheese to the bagel after all cooked. Most importantly, the egg! JUST Egg provides both the folds and a plant-based scramble. I prefer the folds as texture is something that always tends to bother me. There are several other egg replacers that I have heard are excellent, I just haven't got around to trying them all. JUST Egg healthy and sustainable benefits specifically because it has about the same amount of protein as conventional eggs but it has less saturated fat and no cholesterol, according to the website itself.
