Easter Cheesies: Cheesy Potatoes

Who doesn't love cheesy potatoes?! For all of you cheese lovers like me, I found a gluten-free and dairy-free cheesy potato recipe! A creamy and crunchy delight to brighten up your holiday. I found this recipe from a woman named, Kelly Roenicke. She has two boys with food allergies and sensitivities. She is very passionate about allergy friendly cooking and baking. I served this dish with brown sugar glazed ham and it was delicious!
1/2 of a sweet onion, chopped
1/4 cup of vegan butter, Earth Balance
1/8 cup of gluten free flour, Bob's Red Mill
2 cups non-dairy milk, Blue Diamond, Unsweetened
3 oz of vegan cheese, Follow Your Heart
16 oz hash browns
Sprinkle of garlic powder, pepper, and salt
2 cups of potato chips, Cape Cod
Thaw hash-browns slightly. Preheat the oven to 350 degrees
Place the vegan butter spread and the chopped onion in a large pot, and cook over medium heat for about 5 min
Add the gluten free flour blend and stir. Add the non-dairy milk while stirring. Raise the heat slightly, and continue to stir. Do not allow it to boil.
Add dairy-free cheese to the sauce & stir until melted.
Add the hash browns, & seasonings to the pot. Stir to combine.
Spread the mixture into a oven safe dish & top with crushed potato chips
Bake at 350 for 1 hour
