BURRITO BOWLS

GLUTEN-FREE | DAIRY-FREE


Qdoba in your own kitchen? I think so! Burrito bowls are easy to make and customize to make it a different dish every time. Instead of waiting in line and spending money at your corner Chipotle, make your own in the comfort of your own home.This is another recipe where I have never really measured as it depends how many people you're eating with or if you're just making one for yourself.


For those similar to me with their allergies, places like these two can be very scary when not knowing if the same spoons are being used or if they just touched a tortilla with their gloves. All of these ways of cross-contamination can really destroy some individuals bodies. With this at home recipe, you can be sure that you will not get sick because you are the queen + king of the kitchen!


INGREDIENTS:


- peppers, diced

- onions, diced

- chicken, thinly sliced

- rice, cooked

- dairy- free cheese

- taco seasoning

- lettuce, chopped

- guacamole

- salsa

- corn tortilla chips

- garlic, minced

- limes

- olive oil

- dairy-free butter


INSTRUCTIONS:


  1. Just as you would make a burrito, you want to make sure you figure out the timing each ingredient is going to take to prepare and make. Make sure all your peppers, onions, lettuce + limes are cut up.

  2. Cook chicken in a separate pan + set aside.

  3. Cook rice + set aside.

  4. Add dairy-free butter and olive oil to pan and allow it to melt. Once melted, add 2 cloves of minced garlic, stir so the garlic doesn't burn and stick to the pan.

  5. After garlic is fragrant, add onions and peppers. Stir and add in more butter to create a layer on the bottom of the pan. Squeeze half of the limes over the mixture.

  6. Once veggies are cooked, add the cooked chicken into the mixture. Then add the taco seasoning package, as well as a package full of water as instructed on the bag. Stir and allow veggies + chicken to soak in the seasoning.

  7. After this, your burrito bar is all set up, you just have to layer your bowl how you want it.

  8. In the photo below, you will see I added chopped lettuce, dairy-free cheese, chicken + veggie mix with guacamole as a garnish! It was also yummy to dip the chips and salsa in the bowl as well!

  9. Serve + enjoy! :)




You'll see here my roommate and I made a date of this in our living room :) It was absolutely delicious. When I first started to actually enjoy and take up cooking was the beginning of quarantine. I was living with my best friend, my roommate for almost five years. We prided ourselves in the healthy delicious dinners we were making as it has always been tradition to make dinner almost every night. It was a carried on tradition from living in a previous home with our other best friend. It has always been a special time that I am very grateful for. This was also the start of my dairy-free journey! I knew after still continuously getting sick from what I thought was gluten, I needed to take a step back from dairy. It was truly the best decision for me. As I still am fighting to feel 100% everyday, I am getting closer and closer. I know diet changes are hard sometimes but it's extremely helpful in narrowing down what bothers you and what doesn't.
